Autumn Delight: Loaded Sweet Potatoes

Fall brings the cravings for warm and savory foods. This recipe is a wonderful combination that can even be made ahead and reheated for a quick meal. Loaded Sweet Potato

Ingredients:

2 small sweet potatoes, pierced with a fork several times
1 1/2 cups shredded chicken or tofu
1/2 cup black beans
2 tsp olive oil
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp Himalayan Sea salt
2 Tbsp cilantro, chopped

Preheat oven to 400 degrees. Bake sweet potatoes for 40 minutes or until tender. Cut sweet potatoes almost in half lengthwise.

While sweet potatoes are baking, combine chicken, beans, oil, cumin, coriander and salt in a small pan. Cook over medium heat stirring constantly for 5 minutes.

Top sweet potatoes evenly with chicken mixture. Sprinkle with cilantro.

Serves 2. Serving size 1 sweet potato
